How did that happen??
Well, it's been confirmed..... I GAINED extra weight from Christmas.
Oh, well- back to the drawing board!
Just dropped my son off at wrestling practice, came home to do a few things- then will be hitting the gym today - full force. Wanting to lose the extra weight I've gained back, in addition to a few pounds I could do without. All in all, I would like to lose about 20lbs- tone up, and maintain my goals. I have been following a few blogs from fellow moms- of whom I will be posting some of their tips here and there- take from it what you think will help to motivate you in reaching your goals, and pass on to others what you feel may encourage them. It may be exercise tips, recipes, or just general information that you may find useful.

A New Start For The New Year.......
Yes- I realize I am about 5 days early on the resolutions.... but hey, you can never be too early when it comes to doing something better for yourself, right?
As the holidays come to an end...yup- you guessed it... I ate ALOT , AGAIN.
I am looking forward to making a BIG pot of my most favorite 'slimming' soup. It is so good, and good for you that I thought I would share in case anyone wanted to do something lighter- as opposed to the heavy holiday foods we've all been delighting in.
Here is the recipe:
Veggie Slim Soup
3 tomatoes
3 green peppers (keep and use ALL the seeds-as the capsaicin helps to jumpstart your metabolism)
1 bunch spring onions
1 bunch celery w/leaves
2 cups fresh green beans
1 bag carrots
2 large cans crushed tomatoes
2 cans BEEF or VEGETABLE broth
2 cups water
1 packet dry soup mix (onion or vegetable)
2 stock cubes (chicken,vegetable, or beef)
* Chop all vegetables into small pieces (you judge the size you want)
* Place all veggies into a BIG pot
* Add the remaining ingredients
* Salt & Pepper to taste (But not too much salt...don't ruin the objective of the soup being healthy for you)
* BOIL rapidly for 2 minutes, then simmer until all is nice and tender - about 1 hour or so.
(add more water if a thinner broth is desired)
*** Eat this soup for all meals for 1 week. *** Eat fruit as snacks ***
Note: I have added the following after a few days here and there...just to change it up a bit:
corn
shredded chicken
diced jalepenos
top with shredded cheese
add salsa...spicy!

Christmas Recipe - Italian Struffoli

A Time For Sharing......
During the holidays, EVERYONE is reminiscent of something they grew up with. Cake, lasagna, homemade eggnog......or cookies! This is a special recipe that my family, as many others, grew up with. We always ate these little honey balls, and they are Sooooo Yummy!
Rather than just giving you a photo and a recipe...I thought it would be more fun to actually watch how easy these are made- and low and behold! YouTube has such a video! (who woulda thought?)
So...in the spirit of sharing, here is my most favorite holiday treat.
(note: the video is done in both Italian and English- also we used candy ball sprinkles, whereas this is using
Christmas confetti sprinkles. You choose what you like.)

4 Eggs

4 Tablespoons Of Sugar

4 Tablespoons Of Vegetable Or Canola Oil

1 Teaspoon Of Vanilla Extract

1 Teaspoon Of Baking Powder

All Purpose Flour---Just Enough To Make A Soft Dough

Vegetable Or Canola Oil For Frying

1/2 To 1 Cup Of Honey

Additional 2 To 3 Tablespoons Of Sugar For The Honey Mixture

Red And Green Sprinkles For Decoration

Today was just so gloomy! All day- not a bit of sunshine to be found over here. Cold, as well- was 57 degrees today. But that's cool - can't really be in the Christmas spirit full force with 89 degree weather outside. Today we made chocolate chip cookies and fresh hot cocoa. Yum!

Where does time go?

Well, as usual, the weekend has come and gone far too quickly. Hubby is now back over the road - and we are gearing up for the next wrestling tournament (Dec. 15th at Forest High School).
Will be ordering labels for my soaps, (from Designer Label Gal on etsy.com).  And this afternoon I made some lip balm, Cheesecake flavor......mmmmm this stuff is sooo delish! It  goes on smooth and does not have that greasy after feel that some balms do. It is made from a base that is 100% natural, containing sweet almond oil, cocoa butter, mango butter, shea butter, beeswax, and enriched with Vitamin E.

Hello all.....

My apologies for being absent for a few days.... hubby was home from being over the road, and we spent some much needed 'family time'.Took our son shopping, bought LOTS of pre Christmas gifts, hubby got a new surround sound system (WOW it is LOUD!!!!) and I picked up one of those handy dandy little Garmin GPS units. Also will be signing up for a gym membership, as now that I am a full fledged Stay At Home Mom, I actually have the time to do that for myself~ and be able to enjoy it without rushing it into my schedule. Well, the boys are playing the Madden 2010 game on surround sound, and it is WAY to loud for me, so I will be signing off for the rest of today.... and go fiddle with my soap & candle creations. Baby Clown & Anemone

Today I went into Ocala for a few things, and came home with a baby clown and seabae/bubble tip anenome. (too small for the store staff to clearly id as either / or.) So we will wait to see what he grows up to be...heeheehee. These have been placed into my 14 gallon Oceanic Biocube- which is temporarily housing a baby Purple Tang. When the tang gets a bit bigger he will be moved into the main tank -- 180 gallons currently a mixed reef. I will be posting a few pics after I add some more rock/coral to the biocube. Well, Sunday is here.... a beginning to a new week. Will hit the trail today, get a jumpstart on getting back into shape, after eating all that food this past couple of days! Would like to reach my targeted goal by Christmas. So I had better get motivated! Making a big pot of 'skinny soup'. YUM!

Whew! Just got in from shopping...........Black Friday! Wow the stores are crazy! Getting up at the crack of dawn, to try and get to all the super sales advertised, only to find out you are just short of them selling out of what you want before getting there. Frustrating. But I am not going to get up earlier than 5am to grab and go. Think next year we will just sleep in. Ahhh........ turkey sandwich here I come!

Oh the PAIN....the AGONY.....the FULL TUMMY.....

Wow - you would think that after saying "I'm too full" oh, like half a dozen times would have made me NOT go for seconds, thirds, lost count after the pie. I am SO FULL that I can't even breathe! Let alone blog here - but I wanted to jump online and wish all of you a Happy Thanksgiving and be safe and pig out on your most favorite dish! (mine: sweet potatoes) mmmmmmmmmmmmm....... well, I know what I'm having for breakfast! (can't wait for hubby to try the pie..... actually turned out pretty delish-  a new recipe called for red wine to be mixed in with the sugar- I didn't have any....so I used 1/2 a bottle of those itty bitty bottles (you know - the ones at ABC) - MANGO RUM. Really does add a good flavor to the apples. mmmmm......pie is calling - my tummy can't resist...oh what the heck-  the holidays DO NOT count as diet days, right?! lol - Night to all, getting up early to hit the Black Friday sales.

A-Brining We Will Go...

Well.....the turkey and turkey breasts are in the fridge, sitting in a nice brining bath. Soaking up the buttery, sugary, salty goodness that is mixed in with the spices. On to getting everything else in motion for the big day. (this is actually my first year of doing EVERYTHING as hubby usually always cooks the meal and I do the baking. So in addition to my apple pie, caramel apple crumb cheesecake, and traditional pumpkin rolls- I will also be doing the turkey, potatoes, stuffing, etc.etc.etc....
Hubby will be home this weekend from being OTR, so we will have a later celebration than normal.
I probably won't be on for the next two days....unless I post inbetween baking cookies and making cheesecake- so to everyone: Happy Thanksgiving! Be Blessed! ~'Chelle

Sooooooooooooo Exhausted.....

Woke up this morning feeling as though I hadn't slept since Friday!
We spent the entire day Saturday in Springstead for my son's wrestling tournament - I am beat!
Our team - The Citrus Hurricanes - did AWESOME!!! Our guys worked so hard - as a 'team' we came in 2nd out of the schools that attended....and as 'individuals' my son, Michael, placed 3rd in his weight class-

We are getting ready for tomorrow to roll around...as morning practice begins at 5:30am. I still have some shopping to do for this week's worth of cooking/baking/etc.... so I will be posting inbetween my outtings and kitchen time.

Turkey Day is on it's way!!!!

Can't even WAIT for the stuffing..... the sweet potatoes..... the apple pie goodness that awaits just right around the corner!
This year will be a bit different.... as hubby will be returning from over the road the weekend of Thanksgiving, so we will be celebrating again when he gets home. For the time being- it will be my son & I- oh the cooking and baking we have in store for us! I have decided to make a few extra pumpkin rolls and hand them out to close friends. That is ALWAYS a sweet treat!
 I have been online looking at new recipes, and came across a caramel apple pie cheescake? Seriously will need to give that one a try.  The diet has officially been tossed out the window for the next week.... will have to start from ground zero AFTER the last bit of turkey has been gobbled up. MMMM...... so craving a stuffing/turkey/mashed potato sandwich right now!

 We also are getting geared up for our Tournament @ Springstead on Saturday----------------we're planning on kick'in some butt! Go 'Canes!!!

Memory lane.....................

The past couple of days I have spoken with childhood friends that I haven't been in contact with since, well.... childhood.
Wow! What a blast from the past! I truly cannot remember the last time we were together, although I am pretty sure my favorite red beans & rice were on the table! (lol)
 I enjoyed hearing from them.

 I am glad to have gotten a moment to say Hi, and wish you and your families a Very Happy Holiday Season!

Lovely Lavender


Lavender & Oatmeal soap
(with a hint of brown sugar for exfoliation)
Mmmmm..... I LOVE the scent of lavender! It is soooo calming. I made up a fresh batch of lavender soap, to send samples to a recipient from etsy.com - and my house smells so relaxing now. Getting ready to list some more, and today..... I'm feeling the spirit of the holidays. I may experiment with holiday scents this afternoon.. we shall see.
